The No. 118 Chef's Knife by Opinel is made for cutting, slicing and chopping with a rocking seesaw movement. The 3mm-thick blade remains rigid and stable when slicing. It has a continuous cutting edge that frees up the heel of the blade to make it easier to sharpen.
